INGREDIENTS

For the Graham Cracker Crust:
2 1/4 cups (302g) graham cracker crumbs
10 tbsp (140g) salted butter, melted
3 tbsp (39g) sugar
For the Margarita Cheesecake Filling:
24 ounces (678g) cream cheese, room temperature
1 cup (207g) sugar
3 tbsp (24g) all-purpose flour
1/2 cup (115g) sour cream
6 tbsp (90ml) lime juice
2 tbsp lime zest (5–6 limes)
3 large eggs, room temperature
2 large egg yolks, room temperature
For the Whipped Cream:
3/4 cup plus 2 tbsp heavy whipping cream, cold
1/2 tbsp lime zest
1/2 cup (58g) powdered sugar

 

PREPARATION STEPS

Prepare the Crust:
Preheat oven to 325°F (163°C). Line a 9-inch (23cm) spring-form pan with parchment paper in the bottom and grease the sides.
Combine the crust ingredients in a small bowl. Press the mixture into the bottom and up the sides of the springform pan.
