INGREDIENTS

2-3 tbsp olive oil
2 stalks celery, chopped
1 red bell pepper, chopped
1 medium onion, chopped
1 tbsp minced garlic
2 10.5 oz cans cream of chicken soup
1 cup half and half
2 cups sharp cheddar, shredded (shred your own cheese for best melting)
3 cups egg noodles, cooked
5 pounds chicken breast, cooked and shredded
1 tbsp parsley
Salt and pepper to taste
1 sleeve Ritz crackers
1 cup sharp cheddar, shredded
4 tbsp butter, melted

 

PREPARATION STEPS

Preheat the oven to 350 degrees Fahrenheit. Spray a 9×13 baking dish with nonstick spray.

In a 4-quart Dutch oven, heat olive oil over medium-high heat
Add celery, bell pepper, and onion
Cook until onion is translucent and pepper/celery are tender, about 5-6 minutes.
Add minced garlic and cook for 30 seconds, stirring to prevent burning.
Reduce heat to medium and add cream of chicken soup and half and half. Stir to combine.
Once heated through, add shredded cheese. Stir until melted.
